Deconstructed Cuban Pork Sandwich
Ahh normalcy...these past 2 weeks have been absolutely incredible, with the climax being July 27th which will forever mark the greatest day of my life...my wedding. Then transitioning to a week of fun and relaxation at Cedar Point. While the past two weeks will be a time I will never forget, I had to come down from cloud 9 at some point and get back to reality. Not going to lie, I sure did miss you guys and am really excited to start posting again.
Whenever we first got engaged, I was determined to plan the menu for the wedding reception. Thankfully we got an amazing reception hall that gave us that flexibility. So, the past few months I worked with the chef at Mt. Nittany Inn planning the entire menu and even the week of the wedding went up to the kitchen and prepared some of the food.
Our two entrees were a barbecue chicken with a Strawberry Guinness Barbecue Sauce , corn on the cob and whipped mashed potatoes. The second, which I will be sharing with you today, was what I deemed a Deconstructed Cuban Pork Sandwich. Which featured a pork kabob w/ bacon wrapped pickles and a swiss cheese risotto.
I absolutely loved how it turned out and got a lot of great feedback from our guests (which is always nice). So here you go, the Deconstructed Cuban Pork Sandwich, enjoy!
