Breakfast for Dinner: Coconut Milk French Toast
We love breakfast for dinner in our house and for the most part I feel like it tastes better for dinner. What I really enjoy doing is taking recipes that I love, like french toast and giving them a little twist. I took a very basic french toast recipe and instead of using milk or cream for the dairy I decided to use coconut milk. I have come to appreciate coconut milk lately and it actually works really well in chowders.
The beautiful thing about cooking is the ability to transform any recipe, by just using substitutions. I love taking my favorite recipes and substituting something that will give it a unique flavor. For example my Smoked Beer Pizza Crust, instead of using water for the liquid, like most pizza dough's, I substituted beer and all of a sudden it has a whole new unique flavor. Just by learning some basic recipe ratios, you can create recipes that are completely your own! My challenge to you is to take some of your most favorite recipes, sit down with them, and figure out what you could substitute. You'll be surprised how a little tweaking can change the a recipe completely. Enjoy!
