Sous Vide Meatloaf w/ Chipotle Honey Glaze
"Meatloaf, smeatloaf, double-beatloaf. I HATE meatloaf." Well Randy, it's probably cause you didn't have my meatloaf. I don't like to toot my own horn (well sometimes I do), but this meatloaf was off. the. chain!! It just added to my love (obsession) with sous vide cooking. The meat was cooked to perfection, the seasoning was just spot on classic meatloaf flavors and the Chipotle Honey Glaze sweet...tangy...smokey...definitely to my liking.
When I first took it out of my water bath, it looked pretty disgusting, like a grey blob of meat. But, it smelled really good! After I gave it a little mallard reaction love in my trusty cast iron skillet and caramelized the chipotle honey glaze on top, it definitely came to life. You should definitely give this a try, even if you don't have a sous vide device, the flavor was really good and could be easily thrown in the oven and baked. Enjoy!
