As I mentioned in the last post, this is my final semester at Penn State University. One of the culminating classes (HRIM 430) is one of the most intense classes I have ever taken. We are broken up into groups and charged with the task of creating and implementing a fine dining restaurant concept that we open twice a semester to the public. It has been an absolutely insane class, but very rewarding and I have learned a lot.
For the second meal we are required to change an entree item on the menu...so this is what I came up with. Our theme is a Great Gatsby theme and our menu features iconic NYC cuisine with a modern twist. This is an Everything Bagel Crusted Pork Roulade, stuffed with a Scallion Cream Cheese, and topped with a Cherry-Ancho Espresso Sauce. It turned out absolutely amazing and definitely one of the best things I've made. Give it a try and let me know what you think!
