Well the Spring semester has finally come to an end, now I only have to get through finals week this week and I can close another chapter. I figured with the end of the semester on Friday I would celebrate like a true Penn Stater and make a tasty beverage to cap off the semester. I really love Mojitos because I am a huge fan of fresh herbs and there are so many great opportunities to combine fruit with some kind of herb.
When I went to Wegmans to peruse the produce section, looking for inspiration, the first thing I saw were watermelons on display. I figured that was a sign so I grabbed up some watermelon, went and found some basil and I knew what kind of drink I wanted, a delicious Watermelon and Basil Mojito.
What started out as a normal, nothing exciting weekend. Everything changed in about 5 minutes when I got a phone call from my mother telling me that my sister went into labor, 10 days early of course. None of us were prepared, but who really is prepared for anything? So after a couple hours of waiting in the waiting room, arguing about what the sex of the baby was going to be. We finally got word that our family got a little bit bigger with a beautiful baby girl, Amelia Joy, 6 lbs. 6 oz.
