Maple-Whiskey Poached Peaches w/ Green Tea Whipped Cream
This past weekend was the first weekend in a long time we haven't had ANYTHING to do. Nothing planned, nothing scheduled, no places to be, no trips to Michaels to buy wedding stuff. Just pure, unadulterated freedom...definitely a welcome change of pace.
We really did absolutely nothing this weekend, except for be lazy, watch TV, I played a lot of video games, and of course cook. My wife is also a very good cook, so she cooked Saturday night (I'll share her recipe for baked spaghetti soon) and I cooked Sunday. We also decided to take a trip out to Way Fruit Farm to get some fresh produce and of course right at the entrance they had a beautiful selection of peaches. Originally I just wanted them to have as a snack. Then the brain got-a churning and I decided that I wanted to make a surprise dessert for the lady. So I settled on this, Maple-whiskey poached peaches with green tea whipped cream. I ended up poaching them via sous vide and they turned out ridiculously good, I was especially pleased with the green tea whipped cream. As per the usual, I will supply both the sous vide method and traditional method.
Conventional Method
- Pre-heat oven to 350 degrees.
- Peel, halve and core the peaches.
- In an oven-proof saucepan large enough to hold all the peaches, cut-side down, combine the maple syrup and 3 tbsp butter over medium heat, whisking to combine. Once the butter is melted add the whisky and simmer until the alcohol is mostly cooked out (3-5 minutes). Add vanilla extract. Add peaches to the pan cut-side down and saute 5 minutes (reduce heat if liquid is boiling to rapidly and reducing).
- Transfer peaches to oven for 10-15 minutes depending on size of peaches. Remove once cook through and softened, but still firm.
- Remove peaches from pan and set aside. Return pan to stove, and over medium low heat whisk in the remaining 1 tbsp butter to thicken the poaching liquid--it should take on a soft caramel-like consistency. Serve peaches drizzled with the poaching liquid and green tea whipped cream
